We started the morning with some red velvet pancakes with marshmallow “syrup”. Not doing chocolates or overly decadent dinners, so why not indulge in a sugar high at 7 am? Plan on keeping it light for the rest of the day. Fish, veggies and salad. It’s all about balance, right?
This red velvet recipe is simple and takes very little time to make. I made the syrup with a little bit of yogurt since we didn’t have and cream cheese. It turned out great and definitely not as heavy or sweet.
Red Velvet Pancakes (makes 6-8 pancakes)
2 cups dry pancake mix (prepared according to directions), or your own homemade recipe
2 TBL cocoa powder
1/4 cup sugar
1/8 tsp red gel food coloring
2 cups mini marshmallows
2 TBL butter
1 TBL Greek Yogurt
1. Make pancake batter according to the manufacturers directions. Add cocoa powder, sugar and red food coloring.
2. Cook pancakes in a pan or skillet.
3. For “syrup”, melt butter in a non stick pan over medium low heat. Add the marshmallows and stir until they are completely melted and smooth. Remove from heat and add yogurt. Serve warm over pancakes.
4. Garnish with your favorite toppings and enjoy!
