Quinoa Cuisine

I was recently sent a copy of the cookbook Quinoa Cuisine. Just one of the perks of being a blogger that I absolutely love and am uber grateful for.

I’ve been cooking with quinoa as a substitute for rice and pasta for awhile now. Wondering what all the hype about quinoa is about? First of all, it’s insanely nutritious. Packed with protein, fiber, magnesium, phosphorous, and iron. This means it keeps you full longer and won’t mess with your insulin levels like rice does. Weight loss from clean eating? Yes, please! Second, it’s gluten free, which is important for those with Celiac or gluten sensitivities. I actually prefer not to consume much gluten. Don’t get me wrong, I do enjoy the occasional sandwich,spicy fish taco and pasta dish. I’ve noticed that I tend to be “addicted” to foods with gluten and consuming one dish has me craving it over and over again. This leads to overeating and weight gain for yours truly, so quinoa is great for when I get those cravings for rice.

I’ve cooked quinoa as a pilaf and as a substitute for flour in muffins. I’ve had decent results from recipes I’ve found online, but with the cookbook Quinoa Cuisine, the results were amazing. Last night I made a quick chicken picante my mother in law likes to make along with a quinoa pilaf recipe I found on page 28. I modified it slightly by switching out the herbs with cilantro and squeezing lime juice onto the quinoa when it was done cooking. So fluffy, so delicious and no bitter “earthy” taste I’ve managed to have before.

Can’t wait to try more recipes out like the Stuffed Artichokes w/Garlic-Lemon Aioli on page 98 and the Carrot Cake w/Maple Cream Cheese Frosting on page 168. I already have a friend waiting to get her hands on these recipes after flipping through the nutritious and delicious options throughout this cookbook.
