Baked Zucchini Fries

I made these last night as an appetizer and they were heavenly! Vanessa was chowing down like a champ and Philip tried to resist (he failed) because he had a hockey game.  Eating before a game for him is no bueno. He only had a couple nibbles and I had way more than I had intended. I completely forgot it was hockey night, which meant more for me!

Enough fluff, on to the recipe!

Baked Zucchini Fries w/ Sweet Chili Marinara
Ingredients:

2 large zucchini sliced into fries
1 egg (beaten)
Pinch of salt & pepper
1/2 cup seasoned bread crumbs
1 cup panko bread crumbs
Cooking spray
Marinara:
Equals parts marinara sauce and sweet chili sauce


Directions:
1. Preheat oven to 425 degrees.  Spray a baking sheet with a light coat of cooking spray.
2. Toss the zucchini “fries” with the beaten egg, salt, and pepper.
3. Combine the seasoned bread crumbs and the panko in a large ziplock bag. Add a few fries at a time and use the “shake and bake” method.
4. Place the coated zucchini on the baking sheet and bake for 25-30 minutes, turning half way through.
Just a heads up, I noticed that the fries cut from the center of the zucchini were a little soggier and didn’t crisp up like the portions with the skin. Also the thicker slices were less crisp and the portions cut too thin burnt a little. So keep an eye out and cut your zucchini evenly (unlike me). Enjoy!

    I made these last night without the breadcrumbs and made the awesome sauce! I did broil them on high instead totally gave them.that crunch!
